Selenium is an essential mineral present in minute quantities in the body. Selenium's physical properties are very similar to those of sulfur.
Best natural sources
The selenium content of foods depends on the amount present in the soil, either directly (in plant foods) or indirectly (in animal products with selenium derived from animal feed). Even if sufficient selenium is present in the soil, its absorption by plants can be inhibited by sulfur in commonly used artificial fertilizers and by sulfuric acid compounds in acid rain.
Good sources of selenium include brewer's yeast, meat, fish, shellfish, grains, cereals, Brazil nuts, broccoli, cabbage, cucumber, radish, garlic, onions, molasses, and dairy products.
Absorption and storage
The liver, heart, spleen, and kidneys contain four to five times more selenium than muscles and other tissues. Once absorbed, selenium is distributed throughout all tissues except adipose tissue. Selenium is normally excreted in the urine. Selenium in the stool is a sign of incomplete absorption. Because it binds with toxic metals, ingested selenium may not be absorbed.
